I am going to be traveling from Missouri to Arizona passing through Oklahoma, Texas, and New Mexico. I plan on stopping at a truck stop or something similar to get some sleep and will have my pistol with me. I have a CCW permit and these states all have reciprocity, but are there any other quirks that I should know going through those states, IE mandatory concealed or in plain sight laws, etc?

With a permit that applies, you can carry concealed in OK and TX. In TX, you MUST carry concealed.

Keep it concealed in Texas. There's no open carry here. There are laws which protect you from "accidental exposure" but the current ones are a tad bit weak and the improved ones don't go in to effect until September 1st if I recall. Also be aware that if stopped the law requires you to inform the officer that you're carrying a concealed weapon. However there is no penalty if you don't inform them.
