We're in the same boat. I also don't know whether you should make your AR15 tactical or set it up for hunting coyotes.

I have a Colt pencil-barrel carbine that is pretty tackticool, and it kills coyotes just fine too.
You don't have too hang 10 pounds of mall-ninja junk on a perfectly good AR-15 to use it for all sorts of things.

Do people or coyotes die "Differently" depending on the accessories on the gun? I figure; if I can shoot a person at 100-200 yards away with an AR, then I "Probably" can shoot a coyote that far away.

Set it up for coyotes. You'll get a lot more real world use out of it.

You can make it "tactical" and a great hunter if you are wise about what you do to it. An 8 MOA red dot is probably a pretty lousy aide at a 300 yd yote. Something like a 1-7x32 optic would be fantastic. A bunch of lasers, lights, rails, grips, etc can make a crappy rig for either

Most of the 'tactical' AR crap is just that. Keep it simple and clean - and put an optic on it that lets you consistently hit at the ranges you expect to engage targets. More than anything, get out and shoot with it - here we have tactical matches every 2 weeks or so, and that is where you can really learn what works best for you, as well as seeing what others run.
My AR is also a multirole gun - it is set up for carbine competition (and incidentally home defense - though my shotgun is my first choice inside the fence) with a 3x ACOG on top and a 1x RDS on an angled mount off to the right. It's set up in 7.62x39, but can be quickly switched to fire 7.62x39 or 5.45x39 - and also the magwell can be swapped to use AR pattern mags. It's plenty accurate enough for pest control like you describe or for hunting, as well.
So - decide what YOU want to do with it!

Set it up for coyotes. If you have to use it on hominids or Goblins as Cooper called them, it will work fine in social situations as well.

An optimum setup for one purpose does not preclude it from the other. Put a decent 1-4x on it and use it for everything. Or, believe it or not, some folks actually still use iron sights in the field.
There's also nothing wrong with rails, vertical grips and weaponlights if you have a use for them.

Why not use it for both? My primary use is home defense, but I use mine for varmint hunting too.

For coyote you would want an optic that would be good at longer ranges and I guess the stock could be whatever your comfortable with.
I dunno. I have shot coyotes with 22mag S/A revolvers, 30/30's and 9mm carbines so I do not think that the type of AR you use matters too much.
Maybe mount a lite on it that has a red filter too... although they make gun mounted yote spot lights anyway.

Tactical is for an entry team busting in doors at meth lab sites, or patrolling some ville in Helmand province.

KAC, the government supplier for the quad rail, is on record saying the average civilian shooter just doesn't have need for the thing. 48" of rail, a VFG, and a weaponlight adds 2 pounds to that formerly light weight AR. It will do little to nothing in making a coyote any more dead, but it will lighten a wallet $400+ real quick.
Better off with a variable scope, tube free float, and practice shooting 400m on a windy day.
Tactical is available at the local Airsoft dealer, cheaper, looks cooler, and just as effective sitting in the closet.

Who asked them??? It's interesting how some shooters are about this stuff. Even those that use AR's regularly. How's about, rather than making assumptions and potentially offensive generalizations, you ASK why someone may feel a need for such things??? They might tell you, it might be justified and maybe some so-called experts will learn a thing or two and nobody has a need to get defensive.
For me, I raise cattle and chickens. Which means I have a lot of feed stores. Which means I have rodents and predators making regular visits. They mostly come out at night. Which means that if I am to go forth and exterminate said vermin, I need a rifle that accepts a weaponlight. Which is exactly why I have both a "tactical" 10/22 and an AR. Both with rails, both with vertical grips (I dislike tapeswitches) and both have lights mounted. Why??? Not to make a cool toy. Not to show off at the range. Not because I'm a mall ninja. Because I actually NEED them.
....and I will be well-equipped and well-practiced should I need a rifle when other things go "bump" in the night.

There are some mods that make it suitable for both "tactical" and hunting yotes. My first would be to upgrade to the longer Ace stock. (as in, the longer stock Ace produces)
If you already have the HB than dont change it but a medium weight barrel would be ideal for both tactical and hunting.
Flip down iron sights for tactical and a scope for yotes with HIGH quality resetting rings so you can at least get close to zero when you dismount and remount your scope.
