Look at the HK USC-45 vs. the UMP-45, the Beretta CX4 Storm, or I recently found the Caracal CC-10. Why is it that most companies known for their pistols have semi-auto carbines with thumbhole stocks? What's wrong with making one in a traditional stock?

All of those carbines you mentioned are foreign-made. They have to be imported in those configurations to get around silly US regulations (like 922R) that limit importation of so-called "non-sporting" long guns.

I'm sure someone will come along to explain in better detail.

Fishbed is right on the nose. To be 922(r) Compliant, an imported rifle can not have a pistol grip on it. It must therefore, have a thumbhole stock.

That makes sense. Well, 922r is complete {self moderated} but your interpretation makes sense.
