Hold both in your hand. The regular 21 fits me fine, while others say the SF makes a big difference. The only down side to the newer SF is that you have to use the newer 4th generation Glock magazines. With the standard model you can use any magazines. Including some older used ones that can be picked up cheap at times.
The difference between the 21 and the 21SF is small,for some people(myself included)it is enough to make a difference,for others that isn't the case.
If you do try it and find you like it there is a model available that will use all of the available Glock 21 mags(new and old) if that matters to you.
I held both and bought the SF. It was an obvious difference to me with my small-to-medium hands. Persons with larger hands tend (in my experience) to dislike the finger grooves on Glocks in general and prefer the fatter standard 21 to the SF. The SF is now available with the regular mag release and the standard Glock rail, so with some searching one can have the thinner grip with traditional Glock features.
Definitely handle both before buying though. If at all possible, shoot both. Sometimes skinny grips feel worse under recoil.
