So I've got a bone stock Delta on the way and am now considering the mods I will make to this pistol. I am decided on pretty much everything but the grip safety area.

I have a Commander with exactly the same stock hammer/safety setup and it tears my hand up everytime I shoot it. I can only imagine how much worse it will be in 10mm. I suppose I should go with a good ole beavertail and commanderish hammer but I do love the way a spur hammer looks. Also, the contrarian in me rather likes the idea of a spur hammer on a Delta since they weren't made that way. However, I don't know of a high grip beavertail that works with a spur hammer. King's at one time had a drop in but I did not like the way it felt when last I tried it.

Any other options for me out there that deviate from the norm?

Funny you should bring that up. Ted Yost has a deal where he "bobs" and re-contours the hammer so it doesn't bite, and puts in a GI-style grip safety with all the edges de-horned so it is extra comfy. I'm having him do it to my Delta Elite as we speak. The funky skinny grip safety/commander hammer combo on the pre-enhanced Deltas stinks for shooting comfort.

I've kind of lost interest in most of the standard "custom" things done to the outside of a 1911 myself.

Another view of a similar hammer/grip safety setup (with Ted's custom-made rear sight):
