I realize that I'm late to this thread, and have a very low post count. None the less, I'm a former Army Infantry guy who did a tour as a unit armorer and have a long history with firearms, specifically black rifle and AK variants (one of the benefits of being the armorer for an OPFOR company at the National Training Center).
All of that puffery out of the way, you will not go wrong with either the Noveske or LaRue, period. I was in the same position before; choosing between these two manufacturers. Knowing either choice was a solid one, I ended up going with LaRue just because I got a better customer service experience with LaRue.
Now to be clear, both provide great customer service, but Mark LaRue just happened to be more personally readily available; and a few guys who use these rifles for their ultimate intended purpose in the real world, had a preference for LaRue. I'm splitting some serious hairs here. I ordered my Stealth, and it showed up with a slew of goody's that really put the final touch on a great experience.
The same could probably be said about Noveske on any given day. LaRue got my business that day; and I will go back to the LaRue well again.
You obviously know you're getting a rifle that FAR exceeds your stated use; and you've smartly saved the money to go top tier. You've also seemingly researched the topic. Good on you.
You'll have a great rifle no matter what. But I'll throw my hat in for LaRue.
