Most gun shops in your area should be able to point you in the right direction. Dovetail milling is pretty straightforward for the average gunsmith/machinist. They may not even need a mill if they are well practiced with a file.
I guess I have a stupid question though. Do you need a dovetail or would drilled and tapped screw holes suffice or could you modify your sight preference for screw on? Drilling and tapping are even more basic and can be done by a lesser equipped gunsmith with a quality drill press and careful setup. Basically anyone who can drill and tap for a scope can drill and tap for sights.
Also there is the option of getting a dovetail filing fixture and doing it yourself.
Most gunsmiths can do the job but they will probably want to see your rifle and the dovetail sight mount you want first. Issue on centerfire rifles is some barrels are pretty thin and not suitable for dovetailing. Sweating a band sight mount is the alternative there.
