Scope too high on my new Rem 700?

quick story....my first year hunting with a rifle (rem 700 30-06) topped with a 6-18X simmons, set on 18X (beginners mistake). A 175lb 8 point buck ran down the mountain at 50 yards, then stopped. I put the scope on him and only saw brown. I pulled the trigger and shot over him, hitting a sapling. The scope must have been centered high on the deer and I never again set a scope on a power above 5 in the woods. Plus a rifle is at its best with a small lightweight scope, such as a nikon 2-7x32 or something similar. If youre woods hunting, you wont need 9x40, I promise you that.
 
It looks a little higher in the back.
That looks like the difference in height between the front and rear of the receiver. I also have a 20MOA and if it didn't have such a long and flat mounting plane, the cant would be imperceptible.
