so you just sand it down until it's flush? Do you have to coat the sanded areas with anything to protect the plastic, or do you just leave it as is?

Grind it down to flush.
Sanding would take forever and waste a lot of gritted material.
I didn't coat the plastic with anything
 
So with this gun I figured what the heck, frame is more or less ruined anyhow. So I decided to to do a grip chop.

Yep. I can put the flush fitting 26 mag in for extreme concealment or the +p adapter for 13 rounds.
 
Well...far from perfect but they are definitely easy to fully disassemble. I probably would have kept my G21sf if the ergo's were better and it had a thinner slide.

Oh wait, that's the M&P.:p
I'd have kept my G21 if it would have ran reloads reliably like my 1911 does. I love the G19, one of the few 9mm pistols I'd consider for a carry gun.
