Timney trigger for remington 700 - #501 or $510??

Well, it says in the item description:
The 510 trigger is unique by design in that the safety blocks the actual trigger instead of the sear, as a result the bolt can be operated with safety "ON". For use in right hand actions only.

The older 700 safety locked the bolt and it could not be opened with the safety on.
Some see that as a good thing, and some do not.

So with the newer safteies on the newer 700s, there is no reason to get the 501 instead of the 510 or vice versa. This is really an option if one has an older 700.
 
I went through the same thinking process with an FN Mauser Supreme. The Timney replacement trigger allowed the bolt to be worked while the safety was on which to me is a safety benefit. The down side is that if you're hunting and carrying the rifle with a sling the bolt can accidentally be worked open by rubbing against your clothing and the rifle won't shoot if you try a quick shot with the bolt handle in the up position. This happened to me about 5 years ago and I got so mad that I almost wrapped the rifle around a tree. BW
 
Let me share something with you. Whichever trigger you decide to get, you won't be disappointed in it. I have an older rifle, Rem. 788, the original triggers on those were terrible! After years of looking, Timney finally made one to fit the 788. I replaced the trigger, best thing I've done since fooling with firearms. This older .223 shoots hole within a hole very frequently now.
