The long guns on display at our local store are not fully functioning. The bolts are removed on rifles and IIRC the shotguns have trigger guards on them.

I own all three and have carried them concealed but the P220 and P226 are much more comfortable OWB. P239 is the only one I carry regularly IWB. Your mileage may vary.
No other training before the class. I think they said bring 1200 rounds, and recommend 9mm due to cost. At that time I only had the P226R .40 and .40 ST, plus a Kimber .45, so I took the stainless .40 for the class. I ended up using about 1000 rounds in the class.

Do everything you can to shoot both (rentals?) and then pick the one that fits your hand, grip angle, etc the best.
I shoot SiGs and and love my P226s but haven't shot the S&W so I can't honestly compare them for you.
This picture was from the end of first day of Gray Guns class. I had improved a lot by that point. That jagged hole in the headshots represents 3 full 12-rd magazines, shot 6rds at a time rapid fire, plus some mozambique drills, at 7yds!

I've got an older P226 9mm, newer P226 9mm, a newer P226 .40 and a P226 stainless .40. Never had any problems with any of them ejecting live rounds. Get some snap caps for safety's sake, load them up (NO LIVE AMMO) and slow down the slide movement until you figure out...

Standard stainless model finish...I think the picture resize / jpg compression has hazed the resolution a little. The CT grips came on my first gun (nitron/black alloy) but I usually have them on the stainless model.
