I would pick a 7-08 over a .270 every time. The .270 is a great hunting cartridge but it just doesn't have a reputation for long range accuracy plus it isn't really flatter and faster with similar bullet weights than any other cartridge. The 6.5 does have the advantage of long range accuracy with less recoil. Otherwise you're not gaining much over the very accurate and powerful .308. To really gain range and velocity you should look at the 7 MM Mag. I am pretty sure it shoots flatter and has more energy at all ranges plus has a very good reputation for accuracy over any of the cartridges you mentioned.
