What would you pick? I'm debating between a Sig p220 a Sig P239 in .40 a Springfield loaded full size 1911 stainless and a S&W .357 Mag revolver prob a 686P. Gun show's at the end of the month and I cant make up my mind.
You live in Texas like me and you want to try to conceal a full size pistol? Of the guns you listed I would go for the SIG P239.
If it were me, for $700 you can get a Kahr P9 Covert and an alloy S&W J-frame. I just bought a NIB P9 Covert for $415 and a used airweight can be bought for around $300.
I would go with the P239 in the .40. I just bought one in 9mm and love it. With that kind of money you should be able to pick up a two tone with night sites and a nice holster. Good luck.
Saw a used Colt Concealed Carry Officer's the other day for 599, but I might put the extra two and a half bills on a creditcard and get the Kimber CDP Compact instead(or look for a used one).
Another 1911 for the growing stable!!!

All of your choices are good, but of the ones listed there is one that sets the standard for a carry gun that you can buy today and own until the day you drop over;
1st Choice - Sig P220
2nd Choice - Sig P220
3rd Choice - See 1st & 2nd Choice
I'm 6'2" and about 290 so concealing a full size pistol is not a problem. Even in this heat with shorts and a long tailed shirt. I'm looking at the Sigs and also a Springfield "loaded" 1911. A revolver is not out of the running yet either.
I had $700 for a new carry gun and went with a Springfield PX9109L parkerized 5" 1911. I'm way happy. It loves Winchester RA45TP, it loves my new Wilson 7-round magazines. It carries like a dream, shoots like it's begging me to get better, runs like a sewing machine and is just a great looking heater to boot.
P239 .40, no contest. Great carry gun and you should have money left over for ammo and holster unless you get the two tone night sighted top of the line offering.

As much as I like the 220 the P239 just makes more carry sense.
If you are that big you are going to hate the grip on the P239. That is why I have a couple of P225's. My son likes the P239 and the Hogue rubber grip is an improvement, but he is a smaller person.

I'm 6'3" @ 220lbs and I can palm a basket ball. I have fairly large hands but they are not "meaty". My p239 has the Hogue gripps which I think improves the feel, but if the grip was any smaller than I would not own it. I can't stand the way a gun feels when my pinky finger hangs off the bottom. I have had to modify the way I pull the trigger some, because I'm drawing my finger so far back into my palm.
