I think I've got Tennessee game animals pretty well covered with the following.

.22 LR
Squirrel , Rabbits.
.25/20
Turkey, Groundhog.
.303 British
Deer,
Black Bear if ever needed, I don't hunt Bear but one strolled through my yard recently, they've shown up in trees a block from here, and one killed some feral dogs at a friends farm awhile back.
Texas Red Wolves have been drifting this way, the Wolves aren't a problem but they cross breed with feral dogs, and the hybrids can be dangerous.

Theres a Bengal Tiger breeding facility not far from here, and the same facility breeds African elephants, one of the later Bulls broke out and stepped on a child by accident, police buckshot and rifled slugs made no impression on him.
Never been a Big Cat break out here but there have been mass break outs of Big Cats at other breeding facilities in the past.

I think a .308 with a couple of bullet molds and a couple of powders plus some jacketed bullets could be the most versatile rifle ever made[I don't have one]With a 113 Lee "soup can" bullet and a little unique you can take small game 150-165 gr. jacketed bullets for about anything except bison or big bear [you can ever kill those with careful shooting] and in a survival senareo a 170 mold would allow you to mold scrap wheel weights and load to 30-30 levels

I'm not sure I agree with the categories. I absolutely want a .22LR for small game and target shooting but I'm not going to shoot coyotes with it. By North American standards coyotes lap into medium game almost.

My list is:
.22LR
6.5x55
7mm mag? I'm still debating on that.
 
Is this just for hunting, or "forever and ever ahhhhhmen?"

Because, if I was stuck with three calibers forever, it'd read like this:
.22lr
.308
.50BMG

If it was purely for hunting, it'd be
.17HMR
.308
.300 win mag
 
small = .22 rimfire-that's a given, got a Marlin 881, walnut, tube mag. w/4x32.
Meium = .270 Win., got a Savage Sierra110FM w/4-12x50AO.
Large = .30-06 Springfield, tried and proven. Don't have one, need one.

With the rimfire being like needing air, my choice for small would be .223, cheap, easy, and accurate to shoot. Probably an AR.

With the .270 the '06 is moot, so maybe the .50BMG would fill that void?(God Bless John Moses Browning.)

Just depends on what I need to do. I mean if it is just to reduce unwanted critters, does it matter how dead they are?-use the .270.
 
Calibers

I do love my Savage bolt-action in .17 for plinking and would be the "cat's meow" for squirrel and rabbit hunting.

The Ruger bolt-action in .270 Winchester for deer, but can be used to take elk with, too, when using a heavier bullet. Very low recoil with the lighter weight bullets...I tell young hunters and the ladies this a good caliber to purchase based on power, bullet selection, and the somewhat lower recoil than other hunting rifles; plus, you can humanely kill most game in North America with this caliber.

My Winchester Model 70 in .300 Remington Ultra Mag...sold my Ruger in .300 WM to get this "bad boy"; much smoother action than the Ruger and this round...what is it's limits? My limit is 5 rounds off the bench with no recoil protection!!! This gun has one purpose only...to kill big animals!

I have taken elk at 325 and 472 yards with 180-grain Nosler Partions; I need a bigger scope...any suggestions?
 
.22 LR for portability

.30-06 (not sure if that's too much for middle category), for sheer versatility

I'm a bit torn...

small- I'd have to say .223 as i love me AR-15's but as sporting guns go .243 would get the knod...better long range yote dropper and very capable of medium game and up with good marksmanship...plus the ultimate "loaner" rifle caliber for wives, girlfriends and kids. I used to have a sweet HBAR ruger M77 varmint rig I never should have parted with that would cloverleaf inside a dime at 100 yards with a sweet trigger. But I would have to say .223 if it came to it...simply because I love the AR.

medium- .308 has been a favorite...I've owned several. But I'd have to say .270 winchester if it came down to it simply because it's one of my favorites and if I could only have three bolt actions one would have to be in it. .30-06 is a little more versatile but my heart is with the Jack O'Connor aprroved .270

Large- You could say .30-06 here and be well armed or .300 and it simply does everything .30-06 does a little better (with more expensive brass powder and more recoil) But I don't really do any big game hunting and I really don't enjoy .300's .338 is no joy to plink with but it would be my choice if I needed a truly "big game rifle" But at my core I guess I'm more Jack O'Connor than I am Elmer Keith...I'd have to say 7mm Rem mag. Largely because I have one and have used it quite a bit the last few years and have enough fixins to feed my .270 and 7 mag needs for a LONG time. 7 mag simply does all things people say a .270 can do with the proper margin of performance to be a more ethical choice where .270 becomes marginal. Anything bigger than whitetail and it would be the one I went with. I also will never hunt bear (personal choice) and am very picky at the shots I take on game so 7 mag is about as large as I need to go for the shots I'd be willing to take.

Hmm, what are my criteria? Survival, economic, hunting, most efficient killer, alien attack? First and foremost, if I had to choose 3 calibers to save and the rest were wiped off the earth:

.223 Rem for killing anything up to deer
.300 Winmag for killing deer and everything else
.50 bmg because no one said it yet and nothin sends alien guts flying like 700+ grains of copper and lead. Besides, you gotta have a lil fun, right?

If I was the only man left on earth and I could only carry 3 guns, it would be a little different

.45 super for a good wallop and close range defence
.223 and
.308 because of supply
