A few questions occurred to me:

1) Why is the extractor bolted on? Does it have to be changed for the different caliber conversions to work?

2) How well does the barrel return to zero when it's removed and replaced?

It is the ejector that is bolted on... they did it so it could be removed with standard tools, like everything else on the rifle.

Personally I just wish they would rivet it at the factory, but there are a number of very simple solutions for permanently attaching it if you so desire...

RA has test targets on their site showing within-MOA return to zero after removing and replacing the barrel. I have not taken the barrel off to confirm though.
