Lots of things are doable. But the reality is a vast majority of people disengage the grip safety on a pistol merely as normal practice in holstering and un-holstering a firearm. In fact the natural motion for presentation of a pistol is to form your grip first as your unholstering a gun. I've handled plenty of Springfield XD's they are fine guns but I'm not convinced in any way that their grip safety would prevent "Springfield leg" if you were to depress the trigger during presentation or when placing your pistol back in the holster. It's not a natural motion to unholster and holster a pistol without your normal grip on the firearm.

Relying on any single safety is a crutch. That is why there are 4 rules. You can have 10 safeties on a firearm that won't save you if you flag every part of your body. Glock in a way has a single safety, keeping finger off a trigger. Good advice as always, but only useful when used in concert with other safe practices. I prefer the XD over Glock and not just for the grip safety, although that is part of my preference.

I had an XD45. Did I reholster with proper grip and the safety disengaged? Sure. Tons of times. Did I practice the other way I mentioned with the safety activated? I did. Where would a person use that technique on a grip safety equipped firearm? Well during one handed reholster, the grip safety is an added safety measure against a shirt or other garment getting in the trigger guard and might cause an issue. Fingers are not the only thing that can cause a firearm to fire.
