Valnar lol, yeah it starts innocent enough. You swear you just want a couple, then next thing you know you are making reasons to buy more types. Then you start making reasons to yourself to buy another of a type you already have. It's called mil-surp fever. Something that comes close to milsurp fever is GAS, "gear acquisition syndrome" which usually refers to guitars players and their constant excuses for buying more guitars and stuff although the "G" could stand for "gun" also I guess.
South American contract Mausers are things of beauty my favorite being the Argentine 1909.
But for listing my favorite top 5 surplus bolt actions for shooting fun I would say
1# K31 or Swiss 1911 which is among the most accurate surplus bolt models known
2# Swedish M96 also very accurate and made with craftsmanship
3# Argentine 1909, Brazilian 1908 or Persian Mauser all being exquisite Mausers and not that rare to find
4# M1903a3 specially with a C-stock.
5# Enfield NO4. Can be very accurate and a very solid design.
With a nod to the Mosin M39 which can also be very accurate
