Me, I'd go to northern New Mexico. Left side of nowhere. Moderate climate.
I have some family that lived in the way western side of Colorado. It was 15 miles to their mailbox. No utilities, everything is solar or wind. Shoot or grow what you eat. This was some time ago. Don't know if it's changed, but I know there's very little population.
Actually, I guess most states have some areas that are pretty back-woodsy. Find a rancher/farmer that needs a good reliable hand and you're good to go. If you're honest and hard working you'll have a gig for life that would include hunting and fishing.
