If ammo availability is not a factor, I'd pack my Series 70 1911, because it's proven flawlessly reliable, and I trust it to be a good manstopper (for a pistol that is) with either FMJ or JHP, and a selective fire Alexander Arms AR carbine in 6.5mm Grendel, since I think this is the best cartridge currently available for an assault rifle. 6.5mm Grendel is a true intermediate cartridge, with good terminal performance, good long-range performance (due to the sectional density and ballistic coefficient of the projectile), and is controllable on full auto for any occasions where full auto might be needed. Also, as an intermediate cartridge, you can pack a decent number of rounds on your person before weight becomes an issue.
If ammo availability were to be an issue, I'd carry my 9mm Browning Hi Power, since that cartridge would be more available in almost any part of the world than any other, and I'd pack an M16 rifle with a flat top receiver, ACOG optics, and true selective fire, rather than 3 round burst.
