Are there "gun kata" schools?

I've been in the martial arts for over 30 years so I can kind of understand what you are looking for.

Go to a reputable school and learn to shoot well. Tom Givens, Marty Hayes (Washington state), Clint Smith (he is in Oregon), John Shaw, John Farnam, and many others.

THEN after a while use the ideas of forms/kata to design your own ways to practice gun handling and shooting techniques.

But one thing, while Equilibrium was a great movie, don't try dodging bullets! The other guy might be a bad shot... or use a shotgun!

I once asked a similar question to the warrior talk forum for use of the AK. The SI group teaches striking with the AK, getting off the x. reloading techniques, jam clearing, and switching from right to left, changing to different shooting positions, and a lot of other things. One of the their instructors did make some suggestions and when I get time I will take their training videos to make myself a kata or kibone to practice the use of the Ak and Glock pistol since SI teaches them to be use jointly which I agree with.
I hope this sets you on the right track. To do combat you should practice the moves a lot, be physically fit (means you can run, do push ups, chin ups, kick someones behind, etc), and not do everything off of a bench. In my clubs many of shooters are so fat they waddle between the bench and targets and many are also diabetic.
