I can only ever manage to keep a duty loadout for my rifle, pistol, and shotgun just laying around, because I already have "smart" guns. They're smart because apparently they can talk! I mean, EVERY time I walk by, I hear, "C'mon man, we took a vote and decided that we need to be shot today!"
I like to keep just under 1k of every pistol caliber but I tend to keep a lot more of the rifle calibers. If I get under 4k each of 7.62x51, 7.62x39 and 5.56x45, I tend to start scouring the mailers and websites for deals. Because it was so cheap, I've bought so much Hungarian LPZ and Czech silvertip 7.62x54R, I don't think I'll ever run out.
I tend to like certain manufactures of ammo and whenever I need more, I never seem to be able to find any more. I once bought a small stock of S&B 7.62x39 and Yugoslavian 7.62x54R. My rifles and I really liked them but now they are impossible to find and I'm almost out of them. I really like Federal XM193 and Winchester/IMI Q3131 5.56. M193 spec ammo is getting very hard to buy now. Luckily, I have a sizeable stock for now. You also never know when some law will pop up banning importation of ammunition or making interstate purchases difficult.
So now when I choose ammo that I like, I buy in large quanities when it's available and economical to do so. You snooze, you lose.
I have about 1000 rounds of 9mm on hand at this point, another 5-600 rounds of .45acp. Some .38's but not much. I have several hundred rounds of Santa Barbara 7.62 on hand.
Ammo could be good for bartering in a SHTF scenario. It is just smart to have it on hand in case they decide to tax ammo or ration it. I typically shoot 100 rounds, buy 150 to replace them.
I don't stock much, maybe 100 buckshot and a ammo can or two of .45, 400+ 12 gauge skeet rounds (not considered stock, as it's typical to shoot nearly all that in a good practice day).
Basically, there's three amounts:

I generally keep about 1 case of a 1000 in each caliber I shoot. i'm thinking about getting into reloading now that i'm getting into larger bore pistols though. So who knows. I really need to stock up.
I have 1000 rounds of SS109 that sits there, and about 3000-5000 rounds of other calibers. I think I've dropped down to less than 2000 rounds when I was spending "too much" time at the range.
Firearms are useless without ammo, and it's the most vulnerable component. A break in the 'supply chain' could come from an unexpected event at any time. Ammo has a long shelf life. Keep a lot of it close by.
I keep a couple of boxes of ammunition around for most of my guns, usually these aren't full boxes. I use a round or two for hunting season every fall, I expect my couple of boxes will last me a long time.
But
500 rds 9mm(including 3 boxes +P+ Black Talons), need more
1000-2000 rds 7.62x39 (closer to 1000, now, need more)
at least 1000 rds. .22, sometimes quite a bit more
400-500 12 gauge (need more)
and a few hundred rds of 8x57 and 7.62x54R....using up all the milsurp stuff, 'cause accuracy is lousy....will be replaced with a few hundred rds of handloads
In short, need to go on an ammo buying binge, but funds are low right now....So I haven't been shooting much except .22, so as to keep my stocks up
