Well, I'd need to go out and get some new leather, because my fancy leather selection is severely lacking.
I'd probably select one of these, the wood grips most like as the other is my wife's and she'd want to pack her own rig.
For grilling? I'm a ribeye man, especially on the grill.
I like that method with venison, it's best pretty rare in the middle and seared quick IMO.

No, but I have got a cast iron skillet glowing and tossed in a steak. Sear it 30 seconds per side and season it afterwards. Super rare but was decent. Not good enough to do it again.
